Blueberry Yogurt Muffins

1 cup rolled oats 1 cup flour

1 cup (lemon or plain) yogurt

1 tsp salt

½ cup vegetable oil

½ tsp baking soda

¾ cup brown sugar

1 tsp baking powder

1 egg

1 ½ cups blueberries

Steps

1. Soak oats in yogurt.

2. Add oil, sugar and egg. Beat well.

3. Sift in flour, salt, soda, baking powder.

4 Before stirring, sprinkle blueberries over flour mixture.

 

5. Stir to blend.

6. Fill muffin cups and bake at 400 F for 20 minutes.

Makes 20 large muffins.
